Inspired by the ultra-traditional ‘Dai-Pai-Dong’ dish spiced broth sea snail, chef Samuel uses rose distillate, dried peppers, cloves, Sichuan peppercorns, star anise, cinnamon and cumin as the base for the numbing broth.
